Apple Kheer

Kheer is an Indian dessert made of milk, rice and sugar. I have given a healthy twist to the authentic kheer recipe by adding apples and replacing the rice with broken wheat. Apple is rich in dietary fibre and broken wheat is a good source of vitamins, minerals and antioxidants.

Ingredients

  1. 1 cup grated apple
  2. 1/2 cup broken wheat
  3. 4 cups milk
  4. 3 tablespoons sugar
  5. 1 teaspoon ghee
  6. 1/2 teaspoon cardamom powder
  7. 1 tablespoon chopped pistachios
  8. 1 tablespoon chopped almonds
  9. 6-8 apple slices for garnishing

Method

  1. Put the broken wheat in a bowl. Add 3/4 cup of boiling water. Cover the bowl and let it sit for 15 minutes.
  2. Heat ghee in a deep pan and add the grated apples. Saute for 3-4 minutes till slightly soft.
  3. Add broken wheat, milk and cardamom powder. Bring it to a boil and simmer for 15-20 minutes till the kheer thickens up. You can simmer for longer if you like your kheer to be thicker.
  4. Add sugar and mix well. Let it cool to room temperature, keep it in the refrigerator for at least an hour.
  5. Serve chilled, garnished with chopped almonds and apple slices.
