Beetroot Raita

Vibrant and wholesome raita prepared by mixing whisked yogurt with healthful veggies and finished with an aromatic tempering of mustard seeds and curry leaves.

Ingredients

  1. 1 small beetroot
  2. 2 cups whisked yogurt (chilled)
  3. 2 tablespoons finely chopped onions
  4. 2 tablespoons finely chopped tomatoes
  5. 1 teaspoon oil
  6. 1/4 teaspoon mustard seeds
  7. 1/4 teaspoon asafoetida
  8. 4-5 curry leaves
  9. 1/4 teaspoon green chilli paste
  10. 1/4 teaspoon ginger paste
  11. 1/2 teaspoon black salt
  12. 1/4 teaspoon chaat masala
  13. 1/2 teaspoon roasted cumin powder

Method

  1. Peel the beetroot and roughly chop it. Grind it into a smooth paste in an electric grinder.
  2. Combine the whisked yogurt, beetroot paste, onions, tomatoes, black salt, cumin powder, chaat masala, green chilli and ginger paste in a bowl. Mix well and refrigerate till you are ready to serve.
  3. Just before serving, heat oil in a pan. Add mustard seeds and let them crackle. Add asafoetida and curry leaves. Sauté for few seconds and pour this tempering over the raita.
