Broccoli Bhajiya/Pakode

Ingredients

  1. Ingredients for batter:
  2. 1/2 cup besan (chickpea flour/gram flour)
  3. 1/4 teaspoon carom seeds
  4. 1/2 teaspoon coriander powder
  5. 1/2 teaspoon red chilli powder
  6. 1/4 teaspoon amchur (dried raw mango powder)
  7. 1/4 teaspoon asafoetida
  8. A pinch of baking soda
  9. Salt to taste
  10. Other Ingredients:
  11. 1 cup bite-sized broccoli florets
  12. Oil for deep-frying
  13. 1 teaspoon chaat masala

Method

  1. Combine all the ingredients for batter in a large bowl and mix well. Add 3/4 cup of water or as required to make a thick batter.
  2. Heat oil in a pan for deep frying. The oil should be medium hot to fry perfect pakoras. To check, drop a bit of batter into the oil, the batter should come up, but not change color right away.
  3. Dip each broccoli floret in the besan batter and drop 7-8 florets at a time into the hot oil. Fry until golden brown from all sides. Place on a dish lined with kitchen towel/absorbent paper napkins.
  4. Repeat the same process for the remaining broccoli florets.
  5. Sprinkle some chaat masala on the broccoli pakore/bhajiya and serve hot with tomato chutney and masala chai.
