Chocolate Cupcakes

Rich, indulgent and chocolaty delights topped with a creamy frosting that swirls beautifully. These cupcakes are perfect for Valentine’s Day or any occasion that demands for a sweet treat.

Ingredients

  1. Ingredients for cupcakes:
  2. 1 cup self-raising flour
  3. 1/3 cup cocoa powder
  4. 3/4 cup sugar
  5. 1/2 teaspoon bicarbonate of soda
  6. 3/4 teaspoon baking powder
  7. 1 egg
  8. 1/3 cup oil
  9. 1/2 cup milk
  10. 1 teaspoon vanilla essence
  11. Ingredients for chocolate butter cream icing :
  12. 5 tablespoons or 70g unsalted butter
  13. 3/4 cup icing sugar
  14. 2/3 cup cocoa powder
  15. 3/4 cup double cream
  16. 1 teaspoon vanilla essence

Method

  1. Preheat oven to 180°C (160°C for fan ovens). Line cupcake tins with cupcake liners.
  2. Combine self raising flour, sugar, cocoa powder, bicarbonate of soda and baking powder in a large bowl. Mix well and keep aside.
  3. In separate bowl, beat an egg. Add milk, oil and vanilla essence. Mix until just combined; avoid over mixing.
  4. Combine the egg mixture with the dry ingredients (flour, cocoa and bicarbonate of soda) and again mix until just combined.
  5. Spoon the cake mixture into cupcake liners until each case is half filled. Bake for 15-20 minutes.
  6. In the meanwhile, prepare the chocolate butter cream icing. Melt butter in a saucepan on very low heat. Add icing sugar and cocoa powder; mix well to avoid any lumps. Add double cream and keep stirring on low heat until it's warm and smooth but not boiling. Let it cool to room temperature and turn to thick butter cream which is not runny.
  7. Use a piping bag and metal nozzle to swirl the frosting on top of the cooled cupcakes. Use a star nozzle to get the design shown in the picture but you can always try different nozzles and be more creative about decorating your cupcakes.

Serve these cupcakes on their own or with beetroot cutlets and cafe mocha to make a perfect Valentine’s Day meal.

 

You can decorate these cupcakes with edible hearts to make them a perfect treat for Valentine’s Day or sprinkle chocolate curls, edible pearls or glitter to make them more delightful for kids.
