Gajar Halwa

Indian dessert made with grated carrots, milk and nuts.  Gajar ka halwa also known as gajrela is a popular dessert all over India during the winter. It tastes best when served hot garnished with nuts.

  1. 3 cups grated carrot
  2. 4 cups whole milk
  3. 2 tablespoons ghee
  4. 5 tablespoons sugar
  5. 1/2 teaspoon cardamom (elaichi) powder
  6. 1 tablespoon chopped almonds
  7. 1 tablespoon chopped pistachios
  8. 1 tablespoon raisins


  1. Heat milk in a deep non-stick pan and bring it to a boil. Add grated carrots and cook on medium heat while stirring occasionally.
  2. When the mixture starts thickening, reduce the heat to low and cook (while stirring continuously) till the mixture has almost dried. It will take about 30-40 minutes for the milk and carrot mixture to get a thick paste or halwa like consistency.
  3. Add ghee and cook for another 3-4 minutes while stirring continuously.
  4. Add sugar and cardamom powder. Mix well.
  5. Serve hot garnished with almonds, pistachios and raisins.
