Gobi Paratha

Delicious and crispy Indian flatbread stuffed with cauliflower seasoned with herbs and spices. Cauliflower is rich in vitamins and antioxidants making these parathas very healthy; mint leaves add to the goodness of these parathas by imparting a refreshing flavour.

Ingredients

  1. 11/2 cup grated cauliflower (gobi)
  2. 11/2 cup whole wheat flour + 1/2 cup for rolling
  3. 1 small onion finely chopped
  4. 2 tablespoons finely chopped coriander leaves
  5. 1 tablespoon finely chopped mint leaves
  6. 1 teaspoon freshly ground ginger
  7. 1-2 finely chopped green chillies
  8. 2-3 tablespoons oil
  9. Salt to taste

Method

  1. Take whole wheat flour in a bowl, add water and knead a soft dough. Keep aside and let it rest for 15 minutes.
  2. Combine grated cauliflower, ginger, green chillies, salt, coriander and mint leaves in a bowl. Mix well. The stuffing is ready.
  3. Divide the dough into 6-7 equal parts. Apply little oil on your palms and make smooth dough balls.
  4. Place a dough ball on the rolling board and roll it into a disc which is about 3-4 inches in diameter. Put 2 tablespoons of stuffing in the centre. Pull the edges of the disc, wrap them around the stuffing to make a stuffed ball. Press the stuffed ball gently on dry wheat flour from both sides.
  5. Roll the balls into parathas. Dust the paratha lightly with flour while rolling out.
  6. Heat a non-stick pan or tawa and place the paratha on it. Cook on both sides applying oil on each side, until brown spots appear and the paratha gets evenly cooked on both sides.
  7. Repeat the same process for the remaining dough balls.
  8. Serve immediately after taking it off the pan/tawa. Gobi paratha tastes best when it is hot and crispy.
Recipe Tips:

Serve these parathas with butter and mint chutney.
