Lamb Nihari

Succulent lamb shanks simmered in a spicy & fragrant gravy and finished with a tempering of crispy golden brown onions.

Ingredients

  1. 2 lamb shanks
  2. 3 teaspoons ghee
  3. 1 medium sized onion, thinly slices
  4. 1 tablespoon wheat flour (atta)
  5. 1/2 teaspoon garam masala
  6. 1/4 teaspoon red chilli powder
  7. 1 tablespoon ginger juliennes
  8. 1 green chilli, chopped
  9. 2-3 lemon wedges
  10. Salt to taste

Method

  1. Heat ghee in a pressure cooker. Add lamb shanks and sauté on high heat for 2-3 minutes. Add garam masala, red chilli powder, salt and 2 cups of water. Pressure cook on high heat for 4 whistles and then on low heat for 15 minutes. Allow the steam to escape before opening the lid of pressure cooker. Check if the lamb shanks are cooked properly.
  2. Take wheat flour in a bowl, add 1/4 cup water and mix well so that there are no lumps. Add this mixture to the gravy and mix well. Cook on medium heat for 5-7 minutes stirring occasionally.
  3. Heat 1 teaspoon ghee in a pan and add the chopped onions. Add a pinch of salt and saute till they turn golden brown. Add the sauteed onions to the lamb shanks gravy and mix well.
  4. Serve hot garnished with ginger juliennes, green chillies and lemon wedges.
