Mixed Vegetables

An assortment of vegetables perked up with spices. The vibrant colours of the vegetables make this dish an appetizing delight.

Ingredients

  1. 4 carrots, peeled and chopped
  2. 1/2 cup peas (fresh or frozen)
  3. 1 large potato, peeled and diced
  4. 1 small onion, finely chopped
  5. 1 teaspoon finely chopped ginger
  6. 2 tablespoons oil
  7. 1/2 teaspoon red chilli powder
  8. 1/2 teaspoon garam masala
  9. Salt to taste
  10. 1 tablespoon chopped coriander leaves

Method

  1. Heat oil in a deep non-stick pan, add onions and potatoes. Sauté till the onions turn golden brown in colour.
  2. Add the vegetables, salt, red chilli powder and mix well. Add 2 tablespoons of water, cover the pan and reduce the heat to low. Cook on low heat for 5-7 minutes or till the vegetables are cooked.
  3. Sprinkle garam masala and mix well.
  4. Garnish with coriander leaves and enjoy with roti or paratha.

Recipe Tips:

You can also add broccoli or other vegetables of your choice.
