Palak Paneer

Tender paneer cubes dunked in a luscious green and velvety spinach gravy.  It is a popular vegetarian dish in restaurants, usually prepared using loads of cream. Enjoy preparing healthy version of this dish at home without compromising on taste.

Ingredients

  1. 500g washed spinach
  2. 200g paneer (cubed)
  3. 2 tablespoons Chana Dal (Split Bengal Gram)
  4. 1 large onion, finely chopped
  5. 2 tomatoes, finely chopped
  6. 1 tablespoon finely chopped garlic
  7. 1 tablespoon finely chopped ginger
  8. 1 tablespoon finely chopped green chillies or to taste
  9. 2 tablespoons oil
  10. Salt to taste

Method

  1. Combine chana dal with half cup of water in a pressure cooker and pressure cook on high heat for 4 whistles and then on low heat for 5-7 minutes. Let the steam escape before opening the lid of the pressure cooker.
  2. Add the washed spinach leaves to the cooked chana dal and cook for 1-2 minutes until the spinach leaves get wilted. Keep it aside to let it cool. Once cooled, blend it into a smooth paste with the help of a hand blender. Add little water before blending if required.
  3. Heat oil in a pan. Add chopped garlic and onions and saute till they turn golden brown in colour. Add chopped tomatoes, ginger, green chillies and salt . Cook on high heat stirring continuously till the mixture leaves oil.
  4. Add the blended spinach and paneer cubes. Mix well and cook for 1-2 minutes.
  5. Serve hot with roti or naan.
