Paneer Pakoda

Soft paneer squares stuffed with spicy green chutney, coated with besan (chickpea/gram flour) batter and deep fried till golden brown and crispy.  A must try recipe for paneer lovers!

Ingredients

  1. Ingredients for batter:
  2. 1/2 cup besan (chickpea flour/gram flour)
  3. 1/4 teaspoon carom seeds
  4. A pinch of baking soda
  5. Salt to taste
  6. Ingredients for spice-mix:
  7. 1/2 teaspoon coriander powder
  8. 1/4 teaspoon cumin powder
  9. 1/2 teaspoon red chilli powder or to taste
  10. 1/2 teaspoon amchur (dried raw-mango powder)
  11. Salt to taste
  12. Other ingredients:
  13. 200g Paneer (cut into thick square shaped pieces)
  14. 2 tablespoons green chutney

Method

  1. Combine all the ingredients for spice-mix in a small bowl and mix well. Keep aside.
  2. Make horizontal slits into each paneer square to cut it into half leaving it joined from one end. Do not cut through till the edge of the paneer square.
  3. Stuff green chutney into each paneer square and place it in a dish.
  4. Sprinkle the spice-mix on the paneer squares and mix well so that they get nicely coated with spices.
  5. Mix all the ingredients for batter along with half cup of water or as required to make a thick batter.
  6. Heat the oil for deep frying. The oil should be medium hot to fry perfect pakoras. To check, drop a bit of batter into the oil, the batter should come up, but not change color right away.
  7. Dip each paneer square/piece in the besan batter and drop 5-6 pieces at a time into the hot oil. Fry until golden brown from both sides. Place on a dish lined with kitchen towel/absorbent paper napkins.
  8. Sprinkle some chaat masala and serve hot with tomato ketchup and tea.
