Rose Falooda (Instant Recipe)

Instant recipe for a unique and gorgeous dessert as well as drink prepared by layering basil seeds, dessert sev (vermicelli), rose flavoured milk topped with a scoop of ice-cream and chopped nuts. Traditionally, it is prepared by simmering the milk to make it thicker but I have done a slight variation to prepare it instantly if you are expecting guests or you want to have it straight away and can’t  wait for 2 hours for it to be ready!

If you have got all the ingredients at home, you can prepare it in 15 minutes!

Ingredients

  1. 2 cups full-fat milk (chilled)
  2. 5 tablespoons rose syrup or to taste
  3. 1 banana
  4. 1 tablespoon chia seeds (basil seeds can be used if chia seeds are not available)
  5. 1/2 cup or a handful of falooda sev
  6. 3 scoops kesar-pista or vanilla ice cream
  7. 1 tablespoon chopped pistachios
  8. 1 tablespoon sliced almonds
  9. To Serve:
  10. 2 wine glasses

Method

  1. Soak chia seeds in water for 15 minutes. After 15 minutes, the seeds will get swollen. Drain them to get rid of excess water and keep them aside.
  2. Boil the falooda sev in water for 4-5 minutes or till they are cooked. Drain the sev and rinse them immediately with cold water to avoid further cooking. Keep them aside.
  3. Combine chilled milk, banana, 3 tablespoons rose syrup and 1 scoop ice-cream in a blender. Blend till smooth. Blending the milk with banana and ice-cream will make it slightly thicker and save you the time and effort of simmering it and then chilling it in the refrigerator. It tastes equally delicious; in fact you can hardly find any difference in taste.
  4. To serve, take 2 tall glasses. Add a tablespoon full of falooda sev in each glass. Top it with a tablespoon of soaked chia seeds. Pour 1 tablespoon of rose syrup. Add the rose flavoured milk till each glass is 3/4 full. Add a scoop of ice-cream and and a teaspoon of soaked chia seeds.
  5. Garnish with chopped pistachios and almonds.
  6. Serve immediately.

Recipe Tip:

I have used chia seeds instead of basil seeds because they have numerous health benefits and they taste exactly the same as basil seeds. They can be bought from health stores or online. You can use basil seeds or whichever is easily available.
