Sprouts Raita

Super-healthy raita packed with protein from sprouts and nutrients from health-giving vegetables. This delicious, quick and easy to prepare raita can perk up any ordinary meal and make it healthier.

Ingredients

  1. 2 cups whisked yogurt
  2. 1 cup moong sprouts or mixed sprouts
  3. 2 tablespoons finely chopped onions
  4. 1 tablespoon finely chopped tomatoes
  5. 2 tablespoons finely chopped cucumber
  6. 1 tablespoon grated carrots
  7. 1 tablespoon finely chopped coriander leaves
  8. 1/2 teaspoon black salt or to taste
  9. 1/2 teaspoon roasted cumin powder
  10. 1/4 teaspoon chaat masala
  11. A pinch of red chilli powder (optional)

Method

  1. Add the sprouts in a pressure cooker along with 1/2 cup of water and salt. Pressure cook on high heat for 2 whistles. Reduce the heat to low and cook for 2 minutes. Let the steam escape before opening the lid of pressure cooker. Let the sprouts cool to room temperature.
  2. Combine all the ingredients in a bowl and mix well.
  3. Keep it in the refrigerator till you are ready to serve.
  4. Garnish with red chilli powder and roasted cumin powder.

Recipe Tips:

  • Use fresh yogurt; do not use sour yogurt as it will not taste good.
  • To make roasted cumin powder, roast cumin seeds in a flat pan on medium heat till they turn brown in colour (while stirring constantly). Turn off the heat and take them out in a dish. Cumin seeds get roasted very quickly so be careful not to burn them. Let the roasted cumin seeds cool to room temperature. Grind them in a spice grinder or in a mortar and pestle. Store in an air-tight jar and use as required.
