Stuffed Tomatoes

Tomatoes stuffed with a delicious stuffing made of mashed potatoes mixed with spices, peas and fresh coriander leaves.

Ingredients

  1. Ingredients for Stuffing:
  2. 1 cup potatoes (boiled, peeled and mashed)
  3. 2 tablespoons finely chopped onions
  4. 2 tablespoons finely chopped coriander leaves
  5. 2 tablespoons boiled peas
  6. 1 teaspoon freshly ground ginger
  7. 1 teaspoon finely chopped green chillies
  8. 1 teaspoon chaat masala
  9. Salt to taste
  10. Other ingredients:
  11. 4-5 medium-sized tomatoes
  12. 2 tablespoons oil

Method

  1. Combine all the ingredients for stuffing in a bowl and mix well.
  2. Cut the top of each tomato and scoop out the pulp with the help of a knife. Do not throw the tops, keep them to be used later. Store the pulp in the refrigerator and use it later in another dish.
  3. Sprinkle little chat masala inside the hollow tomatoes before stuffing them.
  4. Stuff each tomato with the prepared potato stuffing. Place the top of the tomato over it and seal it by inserting a toothpick into it.
  5. Heat oil in a non-stick pan and place the tomatoes in it. Cook on medium heat without covering the pan. Keep turning them over and cook till the tomatoes become soft and evenly cooked from all sides.
  6. Serve with roti or paratha.
