Stuffed Turiya (Turai/Tori/Ridge Gourd)

Ingredients

  1. 5-6 Turai (Ridge Gourd)
  2. 4 tablespoons oil
  3. 11/2 tablespoon coriander powder
  4. 3/4 tablespoon cumin powder
  5. 1 teaspoon turmeric powder
  6. 1 teaspoon amchur powder
  7. 1 tablespoon red-chilli powder
  8. 1/2 teaspoon asafoetida (hing)
  9. 1 teaspoon fennel powder
  10. Salt to taste

Method

  1. To prepare the stuffing, combine all the ingredients except oil and turai in a bowl. Mix well.
  2. Remove the top and bottom of each turai and peel it. Slit it lengthwise. Cut it into 2-3 pieces (about 3 inches each). Open up the slit of each turai slightly with the help of your thumb and stuff it with the prepared spice mixture all the way from top to bottom.
  3. Heat the oil in a broad non-stick pan and add the stuffed turai. Cook on high heat for a minute while stirring frequently so that the turai gets nicely coated with oil.
  4. Reduce the heat to medium and cook for 8-10 minutes or till the turai becomes soft but still retains its shape. While it is getting cooked, turn it over 2-3 times so that it gets evenly cooked from all sides.
  5. Serve hot with roti or as a side dish with dal & rice.
