Bharwa Bhindi

Lady-fingers (bhindi/okra) stuffed with a flavourful mixture of spices and pan-fried till crisp.

  1. 500g Bhindi
  2. 4 tablespoons oil
  3. 11/2 tablespoon coriander powder
  4. 3/4 tablespoon cumin powder
  5. 1 teaspoon turmeric powder
  6. 1 teaspoon amchur powder
  7. 1 tablespoon red-chilli powder
  8. 1/2 teaspoon asafoetida (hing)
  9. Salt to taste


  1. To prepare the stuffing, combine all the ingredients except oil and bhindi in a bowl. Mix well.
  2. Remove the top and bottom of each bhindi and slit it lengthwise. Open up the slit of each bhindi slightly with the help of your thumb and stuff it with the prepared spice mixture all the way from top to bottom.
  3. Heat the oil in a broad non-stick pan and add the stuffed bhindi. Cook on high heat for a minute while stirring frequently so that the bhindi gets nicely coated with oil.
  4. Cover the pan and reduce the heat to low. Cook for 7-8 minutes or till the bhindi gets cooked.
  5. Uncover the pan and cook on medium heat for another 2-3 minutes or till the bhindi turns slightly crisp.
  6. Serve hot with roti or as a side dish with dal & rice.
