Ingredients

  1. For the Balls:
  2. 1 cup grated broccoli
  3. 1/2 cup grated carrots
  4. 1 tablespoon cornflour
  5. 1 tablespoon plain flour
  6. 1 teaspoon freshly ground garlic
  7. 1 teaspoon freshly ground green chillies
  8. 1 teaspoon freshly ground ginger
  9. 1/4 teaspoon ground black pepper
  10. Salt to taste
  11. Oil for deep-frying
  12. For The Sauce:
  13. 1 teaspoon finely chopped garlic
  14. 1 teaspoon finely chopped ginger
  15. 2 tablespoons finely chopped onions
  16. 2 tablespoons tomato ketchup
  17. 1 tablespoon red chilli sauce
  18. 1/2 tablespoon soy sauce
  19. 1/2 tablespoon vinegar
  20. 1 teaspoon cornflour
  21. 2 tablespoons oil
  22. Salt to taste

Method

  1. Combine all the ingredients for manchurian ball (except oil) in a large bowl and mix well.
  2. Apply some oil on your palms. Take a spoonful of mixture in your hands and shape it into a round ball. If the mixture is not binding or you find it too loose to shape it into a ball, add another tablespoon of cornflour.
  3. Make balls with the remaining mixture and keep them aside.
  4. Heat oil in a deep pan for deep frying. Deep fry the manchurian balls till they are golden brown. Place them on a dish lined with kitchen towel to get rid of the excess oil.
  5. For the sauce, add 1 teaspoon cornflour to 1/2 cup water and mix well so that there are no lumps. Keep aside.
  6. Heat oil in a non-stick pan. Add the onions, garlic and ginger. Sauté for 2-3 minutes (while stirring continuously) or till the onions turn golden brown in colour.
  7. Add the tomato, chilli and soy sauce. Then add the vinegar and salt. Mix well.
  8. Add the cornflour-water mixture and cook on medium heat for 3-4 minutes while stirring frequently.
  9. Add the manchurian balls and cook on low heat for 1 minute or till they get nicely coated with the prepared sauce.
  10. Serve hot with rice or noodles.
