Chicken Tikka

Bite-sized chicken pieces coated with flavourful spices, skewered and then grilled or baked in an oven.

They are quite versatile; they can be eaten as a starter with green chutney or can be served as a main-course dish along with rice or naan. Dice them into smaller pieces and you can use them in your salads or as a filling for your sandwiches & paninis!

Ingredients

  1. 250g diced chicken thigh/breast
  2. 1 tablespoon Greek yogurt
  3. 1 tablespoon oil
  4. 1 tablespoon lemon juice
  5. 2 teaspoons Kashmiri red chilli powder
  6. 1/2 teaspoon garam masala
  7. 1 teaspoon coriander powder
  8. 1/2 teaspoon cumin powder
  9. Salt to taste

Method

  1. Combine the chicken pieces with rest of the ingredients in a large bowl and mix well.
  2. Cover the bowl and keep in the refrigerator overnight or for 6-8 hours for best results. If you are unable to marinate the chicken for 6-8 hours, you can prepare it by marinating for 1hour but the taste will not be the same.
  3. Pre-heat the oven to 180C.
  4. Skewer the marinated chicken pieces. Bake them at 180C for 8 minutes and then turn them over. Bake them for another 7 minutes.
  5. Serve warm with a lemon wedge on the side.
