Fruit & Nut Cake (Eggless)

Delicious orange flavored cake made of semolina (suji) and lots of fruit & nuts! Great alternative to a traditional Christmas cake if you are looking for an egg and alcohol free recipe.

Ingredients

  1. 2 cups fine semolina
  2. 1 cup sugar
  3. 1 cup yogurt
  4. 1.5 cups milk
  5. 1 cup pomace olive oil or any neutral oil
  6. 1.5 teaspoons vanilla extract
  7. 1 teaspoon orange extract
  8. 1 teaspoon orange zest
  9. 1/4 cup lightly roasted chopped nuts (almonds and cashew nuts)
  10. 2 tablespoons dried cranberries
  11. 2 tablespoons raisins
  12. 2 tablespoons tutti-frutti
  13. 2 teaspoons baking powder
  14. 1/2 teaspoon baking soda

Method

  1. Combine the semolina, sugar, nuts, cranberries, raisins and tutti-frutti in a bowl. Mix well.
  2. Mix the oil, yogurt and 1 cup milk (save the remaining half cup to use it at a later stage of the recipe) in a separate bowl using a hand whisk. Once combined, add this mixture to the dry ingredients. Mix well so that there are no lumps.
  3. Add the orange zest, vanilla and orange extract to this mixture and mix well. Keep aside and let it rest for 15-20 minutes.
  4. In the meanwhile, grease a 9 inch springform cake tin and keep aside. Preheat the oven to 180C.
  5. After resting the cake batter for 15 minutes, add the remaining milk (1/2 cup) to it and mix well.
  6. Add the baking powder and baking soda. Mix well so that it gets uniformly incorporated into the batter.
  7. Pour the batter in the greased springform cake tin. Bake in the preheated oven at 180C for 45-60 minutes. It took me 45 minutes to bake this cake perfectly but all ovens are different. Insert a skewer in the middle of the cake when you take it out of the oven; if it comes out clean, your cake is baked perfectly. If you see batter on the skewer, put the cake back in the oven and bake it for another 10-15 minutes.
  8. Let it cool completely and unmold it. Garnish it with some cranberries and nuts on the top.
  9. Serve it on its own or with warm custard.
