Kurkuri Bhindi

Crispy okra coated with delicious spices. It makes a great side dish with dal-rice or can be simply enjoyed with roti.

Ingredients

  1. 2 cups okra (bhindi), cut into 4 pieces lengthwise
  2. 2 tablespoons besan (gram flour)
  3. 2 tablespoons rice flour
  4. 1 teaspoon turmeric powder
  5. 1 teaspoon red chilli powder
  6. 1 teaspoon lemon juice
  7. 1/2 teaspoon chaat masala
  8. Oil for deep-frying
  9. Salt to taste

Method

  1. Combine all the ingredients (except oil and chaat masala) in a large bowl and mix well.
  2. Heat the oil in a pan for deep-frying. Take a handful of bhindi and scatter them in the hot oil. Do not put too many at a time. Fry them till they turn crisp and golden brown.
  3. Take them out in a dish lined with absorbent paper. Sprinkle some chaat masala on it.
  4. Serve immediately with dal-rice or roti.

Note: Fry the bhindi immediately after mixing it with salt and other ingredients otherwise it releases water and turns soggy instead of being crispy after deep-frying.
