Masala Chai

Aromatic tea infused with the goodness of health boosting spices. Masala chai has gained popularity all over the world.  Although, it can be enjoyed at any time of the year, it is a perfect drink in winters as the spices used in its preparation are believed to strengthen the immune system and keep coughs and colds at bay.

Ingredients

  1. 1 cup milk
  2. 11/2 cup water
  3. 2 teaspoons loose tea
  4. 1 black cardamom
  5. 4 green cardamoms
  6. 1 star anise
  7. 1 stick cinnamon (about 1 inch)
  8. 4-5 cloves
  9. 1/2 teaspoon freshly ground ginger
  10. Sugar to taste (optional)

Method

  1. Grind the cinnamon, star anise, cloves, green and black cardamom together in an electric grinder or mortar & pestle. The tea-masala is ready. Store it in an air-tight container.
  2. Boil water in a saucepan. Add 1/2 teaspoon of tea masala (spice powder), 1/2 teaspoon freshly ground ginger, 2 teaspoons loose tea and sugar. Let it boil for a minute to infuse flavours of the ground spices. Add milk and bring to a boil. When it starts boiling, reduce the heat to low and simmer for 1-2 minutes.
  3. Strain the tea and serve hot.
