Ingredients

  1. 2 cups finely chopped nectarines
  2. 3 tablespoons sugar
  3. 1/4 teaspoon turmeric powder
  4. 1/2 teaspoon red chilli powder
  5. 1/2 teaspoon cumin seeds
  6. 1/4 teaspoon asafoetida
  7. 1/4 teaspoon garam masala
  8. 1 teaspoon white vinegar
  9. 11/2 teaspoon salt or to taste

Method

  1. Add the chopped nectarines, sugar, salt, cumin seeds, asafoetida, red chilli powder, turmeric powder and vinegar in a non-stick pan. Cook on medium heat, stirring continuously for 2-3 minutes. At this point, water will seep out of the nectarines.
  2. Cover the pan and cook on low heat for 5-7 minutes or until it gets a thick chutney-like consistency. Keep it aside and let it cool. Once cooled, store it in a glass jar and keep refrigerated.
