Rose Falooda (Authentic Recipe)

A unique and cooling dessert as well as drink prepared by layering basil seeds, dessert sev (vermicelli), rose flavoured milk topped with a scoop of ice-cream and chopped nuts. Traditionally, it is rose flavoured but many variations can be prepared depending upon taste and availability of ingredients.

Time: 20 minutes + 2 hours for refrigeration

  1. 2 cups full-fat milk
  2. 5 tablespoons rose syrup or to taste
  3. 1 tablespoon basil seeds (sabja/tukmaria)
  4. 1/2 cup or a handful of falooda sev
  5. 2 scoops kesar-pista or vanilla ice cream
  6. 1 tablespoon chopped pistachios
  7. 1 tablespoon sliced almonds
  8. To Serve:
  9. 2 wine glasses


  1. Boil milk in a pan with a thick bottom. When it starts boiling, reduce the heat to low and add 1 tablespoon milk powder. Simmer for 5-7 minutes while stirring frequently. The milk will become slightly thick. Chill the milk in the refrigerator for 2 hours.
  2. In the meanwhile, prepare rest of the ingredients. Soak basil seeds in water for 20 minutes. After 20 minutes, the seeds will get swollen. Drain them to get rid of excess water and keep them aside.
  3. Boil the falooda sev in water for 4-5 minutes or till they are cooked. Drain the sev and rinse them immediately with cold water to avoid further cooking. Keep them aside.
  4. After refrigerating the milk for 2 hours, add 2 tablespoons rose syrup (adjust the quantity of rose syrup according to your taste, add more if you like it to be sweeter) to the chilled milk and mix well.
  5. To serve, take 2 tall glasses. Add a tablespoon full of falooda sev in each glass. Top it with a tablespoon of soaked basil seeds. Pour 1 tablespoon of rose syrup. Add the rose flavoured milk till each glass is 3/4 full. Add a scoop of ice-cream and and a teaspoon of soaked basil seeds.
  6. Garnish with chopped pistachios and almonds.
  7. Serve immediately.
