Mushroom Rice

Boiled rice stir-fried with mushrooms and tossed with Indian spices. This simple yet delicious rice dish can be prepared in a jiffy if you have got leftover boiled rice. It’s a versatile dish that can be served on it’s own or with tadka dal or any curry of your choice.

Ingredients

  1. 2 cups basmati rice (boiled)
  2. 1 cup button mushrooms, washed and chopped
  3. 2 tablespoons oil
  4. 1/2 teaspoon cumin seeds
  5. 1/2 teaspoon red chilli powder
  6. 1/2 teaspoon amchoor (dry mango powder)
  7. 1/2 teaspoon garam masala
  8. 2 tablespoons finely chopped coriander leaves
  9. Salt to taste

Method

  1. Heat oil in a deep pan. Add cumin seeds and let the seeds crackle. Add chopped mushrooms, salt, red chilli powder, amchoor, garam masala and mix well. At this point, water will seep out of the mushrooms. Sauté on high heat stirring continuously till the water has evaporated and the mushrooms get a nice brown colour.
  2. Add the boiled rice and coriander leaves. Mix well and cook on low heat till rice gets heated through and acquires the nice aroma of the spices.
  3. Serve hot with tadka dal or on its own!
