Dhaba Dal

Split urad dal and chana dal cooked together and finished with a flavourful tempering.

Dhaba is the name given to roadside restaurants situated on highways in India. Dhaba food is known for its heavenly taste and rustic flavour. Prepare this popular and most commonly ordered dhaba dish in your own kitchen!

Ingredients

  1. 1/2 cup split urad dal (split black gram)
  2. 2 tablespoons chana dal (split bengal gram)
  3. 1 teaspoon finely chopped garlic
  4. 1 teaspoon freshly ground ginger
  5. 1 teaspoon freshly ground green chillies or to taste
  6. 2 tablespoons finely chopped coriander leaves
  7. 1 tablespoon + 1 teaspoon ghee
  8. 1 teaspoon cumin seeds
  9. 1/4 teaspoon asafoetida
  10. Salt to taste

Method

  1. Soak the dal in warm water for about an hour.
  2. Drain the dal. Combine split urad dal, chana dal, 1 teaspoon ghee, salt and 2 cups of water in a pressure cooker. Pressure cook on high heat for 4 whistles and on low heat for 15 minutes. Let the steam escape before opening the lid of pressure cooker.
  3. Mash the dal slightly using a ladle. Add little water if the dal is too thick and let it boil. Add freshly ground ginger and green chillies.
  4. Heat 1 tablespoon ghee in a pan, add cumin seeds and let them crackle. Add chopped garlic and asafoetida. Saute till garlic turns golden brown in colour. Add this tempering to the dal.
  5. Add chopped coriander leaves.
  6. Serve hot with rice or roti.
