Kaju Katli

Delectable cashewnuts fudge flavoured with rose and cardamom.

  1. 1.5 cups cashewnuts
  2. 1/2 cup sugar
  3. 1/4 cup water
  4. 1 teaspoon ghee
  5. Edible silver leaves (optional)
  6. 1/2 teaspoon cardamom powder
  7. 1 teaspoon rose essence (optional)


  1. Grind the cashew nuts to a fine powder. Sieve this powder to get rid of any coarse pieces. While grinding the cashew nuts, be careful not to over grind them otherwise they will turn into cashew butter rather than cashew powder.
  2. Add sugar and water in a large non-stick pan. Add cardamom powder and rose essence. Stir well to let the sugar get mixed in water. Let this sugar-water mixture come to a sharp boil (till it starts bubbling).
  3. Add the cashew powder and reduce the heat to medium. Keep stirring continuously. When the mixture becomes thick reduce the heat to low and keep stirring. Add a teaspoon of ghee at this point. Keep stirring till the mixture starts leaving the sides of the pan.
  4. Take the mixture out in a large bowl. Knead it with a spatula for 2-3 minutes.
  5. Let it cool down for 4-5 minutes and then knead it with your hands to make a smooth dough. Do not let it cool completely, knead it when it is warm but bearable to touch with your hands. Grease your hands with ghee before kneading the dough.
  6. Add 1 tablespoon of milk while kneading if the dough seems too dry. Place the kneaded dough between 2 sheets of parchment paper and roll it evenly (about 1/4 inch thickness). Apply silver vark if using. Cut it into diamond shaped pieces.
  7. Store it in an air-tight container. It stays well in the refrigerator for upto a week.
