Baked Wholewheat Gur Para

Baked & wholewheat version of a Punjabi sweet snack which is traditionally deep fried and prepared using plain flour.  They taste great with tea or coffee especially in winters.

Ingredients

  1. 1.5 cup wholewheat flour
  2. 1/2 cup powdered jaggery
  3. 1/2 cup ghee (not melted)
  4. 1/2 teaspoon cardamom powder
  5. 1/2 teaspoon fennel seeds (saunf) powder
  6. 1/2 teaspoon baking powder
  7. 2 tablespoons sesame seeds
  8. 5 tablespoons milk
  9. 1 teaspoon oil for brushing

Method

  1. In a large bowl, beat the ghee and jaggery powder together using a hand or electric whisk until it is well combined and creamy. It takes about 2-3 minutes.
  2. Add the wholewheat flour, cardamom powder, fennel seeds (saunf) powder, baking powder and sesame seeds. At this point, mix everything with your hand.
  3. Add 4 tablespoons of milk first and mix well so that the dough comes together. Add 1 more tablespoon of milk only if the dough looks too dry and it’s not coming together. You don’t need to knead the dough like chapati or bread dough; it just needs to come together as a ball.
  4. Wrap the dough in a cling film and let it rest in the refrigerator for 20 minutes.
  5. Divide the dough into 3 equal sized balls and roll each ball into a disc almost double the thickness of a roti.
  6. Cut into diamond-shaped pieces or any shape of your choice.
  7. Line a baking tray with parchment paper or aluminium foil. Brush it with oil and place the gur paras in this baking tray.
  8. Bake at 180C or 350F in a pre-heated oven for 15 minutes.
  9. Let them cool completely. Store in an air-tight jar.
