Fruit & Nut Bread

Healthy & palatable bread that is super-easy to prepare. This bread serves as a complete breakfast providing you with protein from the egg & the oats, good fats from the nuts and energy from the banana to kick start your day. It can also be enjoyed as a healthy snack with tea/coffee in the evening.

Ingredients

  1. 2 ripe bananas, peeled & mashed
  2. 3/4 cup self-raising flour
  3. 1/4 cup ground oats
  4. 3 tablespoons maple syrup
  5. 1 teaspoon baking powder
  6. 1/4 teaspoon baking soda
  7. 1 egg, whisked
  8. 1/4 cup oil + 1 teaspoon for greasing
  9. 1/4 cup milk
  10. 1 teaspoon vanilla essence
  11. 11/2 tablespoons chopped almonds
  12. 1 tablespoon tutti-frutti

Method

  1. Combine the self-raising flour, ground oats, baking powder, baking soda, chopped almonds & tutti-frutti in a deep bowl and keep aside.
  2. Combine the whisked egg, milk, oil, vanilla essence and mashed banana in a separate bowl.
  3. Add the egg mixture to the dry ingredients and mix till combined. Do not over-mix. Over-mixing the batter can result in a dense bread, however, we would like our bread to have a light & spongy texture.
  4. Pour this mixture in a greased loaf tin.
  5. Bake in a pre-heated oven at 180º Celsius for 25-30 minutes or till a toothpick inserted comes out clean.
  6. It can be served warm but if you want to cut neat pieces, let it cool down completely before cutting it into pieces. It can be stored in an air-tight container for 2 days.

Recipe Tips:

  • I have used maple syrup instead of sugar as it contains anti-oxidants and minerals like zinc & manganese unlike refined sugar which looses all nutrients due to complex processing. However, please be aware that maple syrup has got almost the same amount of sucrose as refined sugar; the only advantage of using it is that it’s unrefined sugar with nutrients. If you are diabetic or on a special diet, please consult your doctor to get advice on healthy sugar alternatives.
  • You can use raisins if tutti frutti is not available.
