Peanut Chikki

Nutty, crunchy and gluten-free candy bars made of roasted peanuts and jaggery. Peanuts Chikki or Gachak is enjoyed during winters especially on festivals of Lohri & Makar Sankranti.

Ingredients

  1. 1 cup peanuts
  2. 1 cup chopped jaggery
  3. 1 teaspoon ghee for greasing

Method

  1. Roast the peanuts in a pan for 2-3 minutes while stirring continuously. Take them out in a dish and let them cool.
  2. Rub the peanuts between your palms to remove the skin.
  3. Grease a plate with ghee and keep it aside.
  4. Heat the jaggery in a heavy bottom pan on medium heat while stirring continuously. When it starts melting, reduce the heat to low. Continue heating on low for another 3-4 minutes till it starts bubbling and becomes thick. Drop half teaspoon of jaggery syrup in a bowl filled with cold water. If it becomes hard and brittle, the jaggery syrup is ready.
  5. Turn off the heat and add the peanuts. Mix well. Pour this mixture on the greased plate. Roll it flat with the help of a greased rolling pin.
  6. Make horizontal and vertical cuts in the rolled mixture (to prepare chikki squares) while it is hot as it will be difficult to cut neat pieces once it sets.
  7. Store in an airtight container.
