Gajar Halwa

Velvety & vibrant Indian dessert made with grated carrots, milk and nuts; delicately flavoured with cardamom. A must try for those having a sweet tooth!

Gajar Halwa also known as gajrela is a popular dessert all over India during the winter. It tastes best when served hot garnished with nuts.

Ingredients

  1. 1 kg carrots (peeled & grated)
  2. 1 litre whole milk
  3. 3 tablespoons ghee
  4. 3/4 cup sugar or to taste
  5. 1/2 teaspoon cardamom (elaichi) powder
  6. 1 tablespoon chopped cashewnuts
  7. 1 tablespoon chopped almonds
  8. 1 tablespoon chopped pistachios

Method

  1. Heat milk in a deep non-stick pan and bring it to a boil. Add grated carrots and cook on medium heat while stirring occasionally.
  2. When the mixture starts thickening, reduce the heat to low and cook (while stirring continuously) for another 8-10 minutes or till the mixture has almost dried.
  3. Add ghee and cook for another 3-4 minutes while stirring continuously.
  4. Add sugar and cardamom powder. Mix well.
  5. Keep some chopped nuts (cashew nuts, almonds & pistachios) aside for garnishing and add the remaining nuts to the halwa. Mix well.
  6. Serve warm garnished with nuts.
