Beetroot Upma

Delicious upma prepared by cooking semolina with veggies and beetroot. Beetroot not only makes this upma super-healthy but it also renders a beautiful colour making it tempting for the kids.

Serve it in the shape of a car or any other shape loved by your kids and get them excited about eating this healthful dish!

Ingredients

  1. 1 cup coarse semolina
  2. 1 tablespoon oil
  3. 1 teaspoon mustard seeds
  4. 1/4 teaspoon asafoetida
  5. 7-8 curry leaves
  6. 1 medium onion (finely chopped)
  7. 1/2 teaspoon freshly ground ginger
  8. 1/2 teaspoon finely chopped green chillies (optional)
  9. 2 tablespoons green peas (fresh or frozen)
  10. 2 tablespoons grated carrots
  11. 1 small beetroot
  12. 1/2 cup yogurt
  13. 1 tablespoon finely chopped coriander leaves
  14. 1 teaspoon ghee (optional)
  15. Salt to taste
  16. Ingredients for Garnishing:
  17. 4-5 cucumber slices
  18. 2 sweetcorn kernels
  19. 2 small broccoli florets

Method

  1. Peel the beetroot and cut it into pieces. Grind it into a smooth paste in an electric grinder.
  2. Heat oil in a deep pan. Add mustard seeds, when they start crackling, add curry leaves, asafoetida, chopped onions, green chillies, ginger, peas, grated carrots and salt. Sauté on medium heat for about 2 minutes.
  3. Add tomatoes and saute for 2 minutes or till the tomatoes become soft.
  4. Add semolina and saute for a minute.
  5. Add 2 cups of water, yogurt and the beetroot paste. Mix well and let the water boil. Once it starts boiling, add 1 teaspoon ghee and cover the pan. Reduce the heat to low and let it cook for 5 minutes.
  6. Uncover the pan and stir the upma well. The upma should not be too watery otherwise cook it for another 1-2 minutes without covering the pan. It should be soft and moist in texture. The upma with beetroot will get a very nice deep pink colour.
  7. Add chopped coriander leaves and mix well.
  8. Put a serving of upma in the middle of a plate. Use a butter knife the give it the shape of a car or any other shape that your child would love. Even the surface with the help of the butter knife. Use cucumber slices for wheels of the car and windows. Use sweet corn for the headlights and tiny broccoli florets as smoke emitting from the car.
  9. Serve immediately.
