Mango & Chia Breakfast Oats

Super-healthy and quick breakfast loaded with the goodness of oats, chia seeds and mangoes. The combination of these 3 ingredients makes it a wholesome and filling breakfast that keeps you full for longer.

Chia seeds are rich in omega-3 fatty acids, antioxidants, iron and calcium. Oats are good source of fiber and several essential minerals. Mangoes are packed with vitamins & potassium and they impart a divine taste & flavour to this breakfast dish.

Ingredients

  1. 4 tablespoons regular rolled oats
  2. 2 cups milk
  3. 1 cup chopped mango
  4. 1/2 cup mango pulp
  5. 1/2 cup chopped kiwi or any other fruit of your choice
  6. 2 tablespoons chopped almonds
  7. 1 tablespoon chia seeds

Method

  1. Combine chia seeds with 2 tablespoons of water in a bowl and leave them aside.
  2. Combine milk and oats in a saucepan. Bring to a boil and simmer for 4-5 minutes. Keep stirring from time to time so that the oats don't stick at the bottom of the pan. Take the oats porridge out in a bowl, add chopped almonds and keep aside to let it cool.
  3. Once the oats porridge has cooled down to room temperature, add the mango pulp to the porridge and mix well.
  4. Take 2 tall glasses or mason jars and start layering the ingredients. Divide the chopped mango equally into the 2 glasses for the bottom most layer.
  5. Top it up with a layer of chopped kiwi.
  6. Top up the chopped fruits with a layer of oats porridge. Divide the soaked chia seeds equally in the 2 glasses on top of the oats porridge layer.
  7. Garnish with chopped mangoes and serve.

Recipe Tips:

  • I have used kiwi because it’s sourness brings out the sweetness & flavour of mango and it doesn’t overpower the taste of mango. Also, the green colour of kiwi contrasts well with the rich yellow colour of mango. However, you can replace kiwi with any fruit of your choice.
  • Chia seeds can be bought from health stores or from Amazon. Amazon Link  
  • You can prepare it a day before and keep it in the fridge overnight for a quick breakfast before going to work in the morning.
