Leftover-Rice Idli

Have you got some leftover rice in your fridge? How about preparing a delicious snack with it? Don’t worry if it is not plain boiled rice, any leftover rice dish including khichadi can be used for making these sumptuous idlis and the best thing is no one will ever be able to guess what are they made up of!

Ingredients

  1. 1 cup leftover cooked rice
  2. 2 tablespoons semolina (suji)
  3. 1/2 cup yogurt
  4. 2 tablespoons peas
  5. 2 tablespoons grated carrots
  6. 1 teaspoon ginger paste
  7. 1 teaspoon green chilli paste
  8. 1 tablespoon oil
  9. 2 teaspoons Eno Fruit Salt
  10. 1/4 teaspoon asafoetida
  11. Salt to taste

Method

  1. Combine the cooked rice and yogurt in a blender and blend till smooth.
  2. Add semolina, vegetables, oil, salt, asafoetida, ginger & green chilli paste to this batter and mix well to avoid any lumps.
  3. Add about half cup of water to this batter and mix well. Add little more water if the batter looks thick; it should neither be very thick nor too runny.
  4. Grease idli moulds and keep them aside.
  5. Add fruit salt to the batter and mix gently. Pour the batter immediately into the greased idli moulds and place it in the steamer. Steam it for about 10-15 minutes or till a knife or toothpick inserted comes out neat without any batter on it.
  6. Turn off the heat and let the idlis cool for 5 minutes. Take them out in a serving dish and serve hot with tomato chutney or any chutney of your choice.
