Courgettes Pakora (Non-Fried)

Guilt-free pakoras which are pan-fried till crisp on a non-stick tava (flat-pan) rather than deep frying. I can promise you that if you don’t tell anyone, they won’t be able to guess that these delicious pakoras are not deep-fried!

Ingredients

  1. 1 courgette, thinly sliced
  2. 1 teaspoon garlic paste
  3. 1 teaspoon ginger paste
  4. 3 tablespoons besan (gram flour)
  5. 1/4 teaspoon baking soda
  6. 1/2 teaspoon turmeric powder
  7. 1/4 teaspoon red chilli powder
  8. 1/4 teaspoon carom seeds
  9. 1/2 teaspoon amchur (dried raw mango powder)
  10. 3 tablespoons oil
  11. Salt to taste

Method

  1. Combine all the ingredients except sliced courgette and oil in a large bowl and mix well.
  2. Heat 1 tablespoon oil on a non-stick tava (flat-pan) . Dip the courgette slices into the besan batter and place them about an inch apart from each other on the non-stick pan. Cook on medium heat till they are golden brown on one side.
  3. Carefully flip them over using a spatula and cook on medium heat for 1-2 minutes or till golden brown from the other side as well.
  4. Repeat the same process for making rest of the courgette pakoras.
  5. Serve immediately with tomato ketchup or green chutney.

Recipe Tip:

You can also use sliced aubergines (baigan) or sliced boiled potatoes instead of courgettes.
