Spinach & Sweet Corn Toast

Healthy, super-quick and easy toasts that can be served as a snack with tea, breakfast or even packed in the kids lunch-box.

Ingredients

  1. 4 bread slices
  2. 2 cups finely chopped spinach
  3. 1/2 cup sweet corn
  4. 1 small onion, finely chopped
  5. 1 teaspoon finely chopped garlic
  6. 1 green chilli, finely chopped (optional)
  7. 2 teaspoons butter
  8. 2 tablespoons grated cheese
  9. Salt to taste

Method

  1. Heat 1 teaspoon butter in a large non-stick pan and add the chopped garlic & onions. Sauté for about 30 seconds.
  2. Add the spinach, sweet corn, green chilli and salt. Sauté for about 30-60 seconds. Do not overcook the spinach otherwise it will lose its taste, nutrients and bright green colour.
  3. Heat a flat non-stick pan and grease it with butter. Place 1-2 bread slices on it depending upon the size of the pan. Let the bread slices turn light brown and crispy from one side. Flip them over using a spatula and reduce the heat to low.
  4. Spread the prepared spinach & sweet corn topping generously on the toasts. Sprinkle some grated cheese. Cover the pan for about a minute or till the cheese gets melted.
  5. Repeat the same process for the remaining bread slices.
  6. Serve hot.

Recipe Tips:

  • Using a large non-stick pan helps to cook the spinach mixture faster. The water released from spinach evaporates quickly in a pan with a large surface area.
  • I  have added the cheese sparingly so that it does not overpower the taste of spinach; you can add more cheese according to your liking or even prepare absolutely without cheese.
