Veggie Pizza without Oven

Delicious and vibrant pizza prepared by topping assorted veggies on a light and spongy homemade crust. Easy to prepare pizza which will be a huge hit with kids as well as adults!

Time: 20 minutes + 2 hours resting time for the dough

Ingredients

  1. For the pizza base:
  2. 1 cup plain flour
  3. 11/2 teaspoon yeast
  4. 2 teaspoons yogurt
  5. 1 tablespoon oil
  6. 1/2 teaspoon sugar
  7. 1/4 teaspoon salt
  8. Other Ingredients:
  9. 4 tablespoons finely chopped onions
  10. 2 tablespoons finely chopped red pepper/capsicum
  11. 2 tablespoons finely chopped green pepper/capsicum
  12. 2 tablespoons sweetcorn
  13. 1 tablespoons oil
  14. 1 tablespoon butter
  15. 2-3 tablespoons green chutney
  16. 1 cup grated mozzarella cheese
  17. 1/2 teaspoon red chilli flakes
  18. Salt to taste

Method

  1. Combine all the ingredients for pizza in a large bowl. Add about 1/3 cup of luke warm water. Apply oil to your hands and knead a soft dough. Cover the bowl and keep it at a warm place for 2 hours.
  2. To prepare the topping, heat oil in a pan. Add 2 tablespoons onions, sweet corn, red & green peppers. Add salt and saute for 1-2 minutes till the vegetables are slightly cooked but still crunchy. Add red chilli flakes and mix well. The topping is ready.
  3. After letting the dough rest for 2 hours, it will rise and become almost double. Divide the dough in 2 equal parts. Roll each part of the dough into a ball. Place the dough ball on a dusted surface and roll it into a thick disc almost double the thickness of a roti. Prick holes in the rolled disc (pizza base) with the help of a fork.
  4. Heat a thick bottomed non-stick pan and grease it. Place the rolled disc/pizza base on the heated pan and reduce the heat to medium-low. Let the pizza base turn light brown from one side and flip it over using a spatula.
  5. Apply some butter on the top of pizza base. Spread green chutney over it. Spread the mixed vegetable topping generously on top of the green chutney. Scatter some chopped raw onions and grated cheese over the veggie topping. Cover the pan with a lid and cook the pizza on low heat till the cheese gets melted and the other side turns light brown and slightly crispy.
  6. Repeat the same process for the second dough ball.
  7. Serve hot.
