Kiwi Ice-Cream

Fruity and refreshing ice-cream packed with vitamin-C and antioxidants from kiwi. It’s super-easy to prepare using few ingredients with only 10 minutes of preparation time.

Ingredients

  1. 150 ml heavy cream
  2. 3 tablespoons condensed milk
  3. 2 ripe kiwis (peeled & roughly chopped)
  4. 2 tablespoons milk
  5. 1 teaspoon vanilla essence
  6. 2 tablespoons powdered sugar or to taste

Method

  1. Combine the chopped kiwi, powdered sugar and 2 tablespoons of milk in a grinder and grind into a smooth paste. You can also keep this paste slightly coarse if you want to have small bits of kiwi in your ice-cream. Keep it aside.
  2. Pour the heavy cream in a large bowl and place this bowl in the freezer for 10-15 minutes. If you are going to use a hand whisk, place it in the freezer as well with the cream.
  3. Place condensed milk in the freezer for 10-15 minutes.
  4. After chilling the heavy cream in the freezer, beat it using a hand or electric whisk until soft peaks are formed.
  5. Add chilled condensed milk, kiwi paste and vanilla essence to the whipped cream. Mix gently using a spatula until just combined. Do not overmix.
  6. Pour this mixture into a freezer-safe container and freeze for 6 hours or overnight .
  7. Scoop out in ice-cream bowls and garnish with kiwi slices.
