Mooli Paratha

Healthy Indian flatbread stuffed with radish seasoned with spices and herbs. Mooli paratha is very popular in Punjab state of India especially in winters.

Ingredients

  1. 1 cup grated radish (mooli)
  2. 11/2 cup whole wheat flour + 1/2 cup for rolling
  3. 2 tablespoons finely chopped coriander leaves
  4. 1 tablespoon finely chopped mint leaves
  5. 1 teaspoon freshly ground ginger
  6. 1-2 finely chopped green chillies
  7. 1/2 teaspoon carom seeds (ajwain)
  8. 2-3 tablespoons oil
  9. Salt to taste

Method

  1. Add salt to grated radish, mix well and keep aside for 15 minutes.
  2. In the meantime, knead the dough for parathas. Take whole wheat flour in a bowl, add water and knead a soft dough. Keep aside and let it rest for 15 minutes.
  3. Squeeze the grated radish to remove excess water. Combine squeezed radish, carom seeds, ginger, green chillies, salt, coriander and mint leaves in a bowl. Mix well. The stuffing is ready.
  4. Divide the dough into 6-7 equal parts. Apply little oil on your palms and make smooth dough balls.
  5. Place a dough ball on the rolling board and roll it into a disc which is about 3-4 inches in diameter. Put 2 tablespoons of stuffing in the centre. Pull the edges of the disc, wrap them around the stuffing to make a stuffed ball. Press the stuffed ball gently on dry wheat flour from both sides.
  6. Roll the balls into parathas. Dust the paratha lightly with flour while rolling out.
  7. Heat a non-stick pan or tawa and place the paratha on it. Cook on both sides applying oil on each side, until brown spots appear and the paratha gets evenly cooked on both sides.
  8. Repeat the same process for the remaining dough balls.
  9. Serve hot with butter.
Recipe Tips:

Mooli paratha taste great with mango chutney along with butter or yogurt.
