Hearty Vegetable Soup

Delicious soup made of healthful vegetables and spices. This magnificent winter warmer served with bread of your choice can be enjoyed as a complete meal. It’s so satisfying and comforting; you will fall in love with it!

Ingredients

  1. 2 carrots, sliced
  2. 2 tablespoons peas
  3. 2 chopped tomatoes
  4. 2-3 broccoli florets
  5. 1 beetroot, roughly chopped
  6. 1 cup spinach leaves
  7. 2 tablespoons fresh coriander leaves
  8. 1 teaspoon grated ginger
  9. 2 teaspoons freshly squeezed lemon juice
  10. 2 cloves
  11. 1 black cardamom
  12. 1 small stick of cinnamon (approx. 1 inch)
  13. Freshly ground black pepper to taste
  14. Salt to taste
  15. 1 teaspoon fresh cream (optional)

Method

  1. Put all the vegetables with 2 cups of water in a pressure cooker and pressure cook for 4 whistles. Allow the steam to escape before opening the lid of the pressure cooker.
  2. Blend the mixture using a blender till smooth. Strain it and keep it aside.
  3. Grind the black cardamom, cinnamon and cloves in a mortar and pestle or spice grinder. Add 1/4 teaspoon of this spice to the soup.
  4. Add 2 teaspoons of lemon juice to the soup and mix well.
  5. Serve hot in soup bowls. Garnish with fresh cream and coriander leaves.
