Chana Masala

Spicy and delicious dish prepared by cooking chickpeas with aromatic spices. Chana masala  also known as chole is a popular dish from India. It is a versatile dish which can add delight to any meal.

Ingredients

  1. 1 cup white chana (chickpeas), soaked overnight
  2. 2 onions, finely chopped
  3. 2 tomatoes, finely chopped
  4. 1 tablespoon finely chopped garlic
  5. 1 tablespoon finely chopped ginger
  6. 2 tablespoons oil
  7. 11/2 tablespoons chana masala
  8. 1 teaspoon Kashmiri red chilli powder
  9. 2 tablespoons finely chopped coriander leaves
  10. Salt to taste

Method

  1. Combine the soaked chana, 3 cups water, 1/2 tablespoon chana masala and salt in a pressure cooker and pressure cook on high for 4 whistles. Reduce the heat to low and pressure cook for 7 minutes. Allow the steam to escape before opening the lid of pressure cooker.
  2. Heat oil in a deep pan and add the onions, ginger, garlic, tomatoes, 1 tablespoon chana masala, Kashmiri red chilli powder and salt. Cook on high heat for about a minute while stirring occasionally. Add the boiled chana along with the water in which they were boiled and continue cooking on high heat for another minute. Cover the pan, reduce the heat to low and cook for 5 minutes.
  3. Add finely chopped fresh coriander leaves.
  4. Serve hot.

Recipe Tips:

You can buy ready chana spice powder (chana masala) in Indian grocery stores. If you want to prepare chana masala at home, please find the recipe below:

  • 1 tablespoon coriander seeds
  • 1/2 tablespoon cumin seeds
  • 1/2 teaspoon whole black pepper
  • 5-7 cloves
  • 1 small stick cinnamon (approx. 1 inch)
  • 1 black cardamom
  • 2 green cardamoms
  • 4 dried red chillies
  • 1 teaspoon dried pomegranate seeds
  • 2 bay leaves
  • 1 teaspoon dried fenugreek leaves
  • 1/2 teaspoon mace powder
  • 1 teaspoon black salt
  • 1/4 teaspoon nutmeg powder
  • 1 teaspoon dry mango powder
  • 1/2 teaspoon amla powder

Dry roast the coriander seeds, cumin seeds, black pepper, cloves, cinnamon, black & green cardamom seeds and dried red chillies. Let them cool. Combine the roasted spices along with dried pomegranate seeds, bay leaves, dried fenugreek leaves, mace, black salt, nutmeg powder, dry mango powder and amla powder in a spice grinder and grind them to make a fine powder. Chana masala spice powder is ready. Use this spice powder as directed in the recipe and store the leftover spice powder in an air-tight container.
