Ingredients

  1. 1 cup whole-wheat flour
  2. 2 tablespoons fine semolina
  3. 2 tablespoons sesame seeds
  4. 3/4 cup finely chopped jaggery
  5. 1/2 cup milk
  6. 1 teaspoon cardamom powder
  7. Ghee for deep-frying

Method

  1. Dry roast the sesame seeds on medium heat in a non-stick pan for about a minute or till they turn light brown and release a nice aroma. Keep aside.
  2. Combine the whole wheat flour, semolina and milk. Mix well. No need to knead it into a dough, the mixture should just come together as a big ball.
  3. Make 8-10 balls out of the prepared mixture. Flatten each ball slightly between your palms.
  4. Heat the ghee for deep frying. Deep fry the flattened balls on medium-low heat till they turn golden brown. Keep aside and let them cool.
  5. Once cooled, break them into pieces and grind into a coarse powder in an electric grinder. The churma is ready, take it out in a large mixing bowl.
  6. Add cardamom powder and roasted sesame seeds to the churma.
  7. Heat 2 tablespoons ghee in a non-stick pan and add the jaggery. Heat it for about a minute or till the jaggery gets melted.
  8. Add the melted jaggery to the churma and mix well.
  9. Let the churma laddu mixture cool down slightly so that it doesn't burn your hands. Do not let it cool down completely otherwise it will be difficult to roll it into laddus.
  10. Once the mixture has cooled down a bit but still warm enough to be rolled into laddus, grease your palms with ghee and roll out the laddus.
  11. Store in an airtight container.
