Gajar Halwa

Indian dessert made with grated carrots, milk and nuts.  Gajar ka halwa also known as gajrela is a popular dessert all over India during the winter. It tastes best when served hot garnished with nuts.

  1. 3 cups grated carrot
  2. 4 cups whole milk
  3. 2 tablespoons ghee
  4. 5 tablespoons sugar
  5. 1/2 teaspoon cardamom (elaichi) powder
  6. 1 tablespoon chopped almonds
  7. 1 tablespoon chopped pistachios
  8. 1 tablespoon raisins


  1. Heat milk in a deep non-stick pan and bring it to a boil. Add grated carrots and cook on medium heat while stirring occasionally.
  2. When the mixture starts thickening, reduce the heat to low and cook (while stirring continuously) for another 8-10 minutes or till the mixture has almost dried.
  3. Add ghee and cook for another 3-4 minutes while stirring continuously.
  4. Add sugar and cardamom powder. Mix well.
  5. Serve hot garnished with almonds, pistachios and raisins.
