Spinach & Mung Idli Bites

Healthful & palatable bite sized idlis prepared from a batter of green mung dal, semolina and spinach.  Green moong dal is rich in protein and fibre making this snack healthy and filling. Spinach imparts a gorgeous green colour and takes the nutritional value of this snack to the next level.

Ingredients

  1. 1 cup green moong dal flour
  2. 1/2 cup semolina grits (extra-coarse suji)
  3. 1 cup shredded spinach
  4. 1/2 teaspoon roughly chopped ginger
  5. 2 green chillies or to taste
  6. 1/2 cup yogurt
  7. 1 tablespoon oil
  8. 2 teaspoons Eno Fruit Salt
  9. 1/4 teaspoon asafoetida
  10. Salt to taste

Method

  1. Combine yogurt, spinach, green chillies and ginger in a blender and grind into a smooth paste.
  2. Grease mini idli moulds and keep them aside.
  3. Combine the moong dal flour, semolina, yogurt-spinach paste and 1 cup of water in a large bowl. Add half of the water first and mix well. Mix well to avoid any lumps.
  4. Add oil, salt and asafoetida. Mix well to make a smooth batter and let it rest for 20 minutes.
  5. after resting the batter for 20 minutes, add fruit salt to the batter and mix gently. Pour the batter immediately into the greased mini idli moulds and place it in the steamer. Steam it for 10-12 minutes or till a knife or toothpick inserted comes out neat without any batter on it.
  6. Turn off the heat and let the idlis cool for 5 minutes. Take them out in a serving dish and serve hot with tomato chutney.

Note:

  • You can replace the semolina grits with coarse semolina but the texture of the idli would be slightly different. Use less water if you are not using extra-coarse semolina.
  • You can also prepare this idli in the normal idli mould; just steam it for extra 4-5 minutes.
