Healthy Sprouts Cutlets

Protein-rich patties made of sprouted whole green gram, potatoes and spices; rolled in hearty oats and then cooked on a tava (griddle) till golden brown.

The protein-rich moong beans and the fibre-rich oats are known to regulate blood sugar levels making these cutlets a guilt-free indulgence for diabetics or for anyone who enjoys delicious food without compromising on health.

Ingredients

  1. 1 cup sprouted whole green gram (moong sabut)
  2. 1/2 cup mashed potatoes
  3. 1/2 cup peas, boiled or steamed
  4. 1 small onion finely chopped
  5. 1 teaspoon freshly ground ginger
  6. 11/2 teaspoon freshly ground green chillies or to taste
  7. 2 tablespoons finely chopped coriander leaves
  8. 4 tablespoons rolled oats
  9. 1 tablespoon plain flour
  10. 2 tablespoons oil
  11. 1 teaspoon chaat masala
  12. A pinch of asafoetida
  13. Salt to taste

Method

  1. Take sprouted moong in a pressure cooker. Add a pinch of salt, asafoetida and 1/2 cup of water. Pressure cook on medium heat for 2 whistles. Let the steam escape before opening the pressure cooker. Remove any extra water from the cooked moong, you can use it in your curry or soup.
  2. Once cooled, take the cooked sprouted moong in a large bowl and mash roughly with a spoon. Add the mashed potatoes, boiled peas, chopped onions, coriander leaves, chaat masala, salt, freshly ground ginger and green chillies and mix well.
  3. Apply oil to your palms and take a heaped tablespoon of the mixture in your hands. Shape it into round cutlets.
  4. Take the plain flour in a bowl and add 4-5 tablespoons of water to make a thin batter. Stir well to avoid any lumps. Dip each cutlet in the batter and roll it in oats till it is coated with oats from all the sides.
  5. Heat oil on a flat non-stick pan and cook each cutlet from both sides till it turns golden brown in colour.
  6. Serve hot with chutney of your choice.
Recipe Tips:
  • These cutlets taste great with mint chutney or tomato chutney.
  • The quantity of ingredients mentioned above will be enough to make 7-8 cutlets.
  • You can also steam the sprouted moong instead of cooking it in pressure cooker.
